How do I get this MF part apart ?

These are fixed to the patio doors

The cover is likely clipped onto the central bolt housing

But v tight, these are nuts expensive and don’t want to break / scratch it

Any suggestion ?

I have no idea.....but....I would try to see if the long silver cover pops off....or the black plastic square can be pried off and the silver cover slid off

You’re not wrong, being a bit more brutal, top cap off, metal cover slides off, bolt still in the way of the fixing holes
Do these black ‘spacers’ need to come out somehow ?

Bolt has to come out...either it slides backwards or the handle comes off and it slides upwards...try turning the bolt in case there is a slot to make it slide out

I would try this:
clamp the round shaft in a vice with protected jaws. blather it with WD40 and then keep working the bolt in and out.
If that doesn't do it, try using bar keepers friend - it's a cleaning powder for pubs/loos etc and it is mildly abrasive so if you can work it into the plastic ends it should free them off a bit. Or T Cut/paint oxidation remover - similar effect.

Then the screws supplied have heads a bit big making it all a bit of a nightmare with no chandlery nearby

Fixed now 👌
